Zest & Juice from Clementine, Mandarin or Tangerine.
In a large bowl whisk melted butter, oil, eggs and egg yolks and sugar. Add water & almond extract
Add polenta, almond flour, flour, salt, and baking powder. Whisk to combine and incorporate mixtures
Add zest and juice of citrus, either clementine, tangerine, or mandarin orange
Pour into a greased cake pan and bake for 25 mins at 350 degrees, till golden and risen
Optional to top with lightly sweeten whipped heavy and garnish with citrus segments & berriesĀ
