
Polenta Citrus Cake
Have you ever boiled whole oranges? It sounds unheard of but makes all the difference for this cake
Ingredients
- 3/4 cup melted butter
- 1/4 cup vegetable oil
- 2 eggs
- 2 egg yolks
- 1 cup sugar
- 1/4 water
- 1 almond extract
- 1/2 cup polenta
- 1 cup flour
- 2 baking powder
- 1 salt
- 1 clementine, mandarin or tangerine
Instructions
- Zest & Juice from Clementine, Mandarin or Tangerine.
- In a large bowl whisk melted butter, oil, eggs and egg yolks and sugar. Add water & almond extract
- Add polenta, almond flour, flour, salt, and baking powder. Whisk to combine and incorporate mixtures
- Add zest and juice of citrus, either clementine, tangerine, or mandarin orange
- Pour into a greased cake pan and bake for 25 mins at 350 degrees, till golden and risen
- Optional to top with lightly sweeten whipped heavy and garnish with citrus segments & berriesĀ
