Polenta Citrus Cake

Have you ever boiled whole oranges? It sounds unheard of but makes all the difference for this cake

Ingredients
  

  • 3/4 cup melted butter
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 egg yolks
  • 1 cup sugar
  • 1/4 water
  • 1 almond extract
  • 1/2 cup polenta
  • 1 cup flour
  • 2 baking powder
  • 1 salt
  • 1 clementine, mandarin or tangerine

Instructions
 

  • Zest & Juice from Clementine, Mandarin or Tangerine.
  • In a large bowl whisk melted butter, oil, eggs and egg yolks and sugar. Add water & almond extract
  • Add polenta, almond flour, flour, salt, and baking powder. Whisk to combine and incorporate mixtures
  • Add zest and juice of citrus, either clementine, tangerine, or mandarin orange
  • Pour into a greased cake pan and bake for 25 mins at 350 degrees, till golden and risen
  • Optional to top with lightly sweeten whipped heavy and garnish with citrus segments & berriesĀ
