Chocolate Chip Cardamom Muffins

Elevate your chocolate chip muffins with a sprinkle of toasted cardamom!

Ingredients
  

  • 6 cardamom pods, toasted & ground
  • 1 stick softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 tspn vanilla
  • 2 cups all-purpose flour
  • 2 tspn baking powder
  • pinch salt
  • 1/2 cup milk
  • 2 cups chocolate chips

Instructions
 

  • Crack cardamom pods and deshell the seeds, add to pan and toast on stovetop over low heat just till fragrant. Set aside to cool for a minute before blitzing in spice grinder or pounding into powder
  • Cream softened butter and sugar till pale and sugar has dissolved into butter. Stir in eggs one at a time and add vanilla.
  • Add ground toasted cardamom and combine. Sift in dry ingredients and pour in milk
  • Fold in chocolate chips and combine to form batter
  • Line muffin tin wells with baking paper and scoop batter into each muffin well. Sprinkle extra chocolate chip onto if desired
  • Bake at 350ยบ for 30 mins till edges have turned golden. Let cool in pan for a few minutes before serving
